I want to exchange an exercise with a different exercise using the same muscle group; however the exercise is not appearing in the exercise list to replace.

When you choose to exchange an exercise, the list that appears, by default, consists of exercises from the same muscle group. If an exercise does not appear, first double check that the equipment is assigned to a room (activating all exercises related to this equipment). If the exercise still does not appear, please contact customer support - it is possible that this exercise has not be associated with the muscle group you are working with.
